A Feast for the Senses: Fried Rice with Baked Fish, Red Pepper, and Spicy Tomato-Habanero Stew



In my quaint little kitchen, I started preparing a meal that is as visually stunning as some of the photographs I have been capturing lately. This is a very special time of the year for me, and I am treating my beloved family to a culinary masterpiece that not only tantalizes their taste buds but also showcases the Maishal photography creative flair. Join me as I step into the kitchen and savor the flavors and colors of the turmeric fried rice, baked fish, fried red pepper and onion, and spicy tomato-habanero stew.


The Ingredients:

1. Turmeric Fried Rice:

  • Cooked white rice w/ Coconut milk

  • Fresh turmeric root (grated)

  • Mixed vegetables (carrots, peas, and corn)

  • Garlic and ginger (minced)

  • Soy sauce

  • Sesame oil

  • Scallions (chopped)

  • Salt and pepper to taste

2. Baked Fish:

  • Fresh tilapia(s)

  • Olive oil

  • Lemon juice

  • Garlic powder

  • Paprika

  • Salt and pepper

3. Fried Red Pepper and Onion:

  • Red bell peppers (sliced)

  • Onions (Sliced)

  • Olive oil

  • Sea salt

4. Spicy Tomato-Habanero Stew:

  • Ripe tomatoes (diced)

  • Habanero peppers (finely chopped, adjust to your spice tolerance)

  • Onion (chopped)

  • Garlic (minced)

  • Fresh cilantro (chopped)

  • Olive oil

  • Salt and pepper


The Culinary Artistry:

1. Turmeric Fried Rice:

  • Start by heating olive oil in a wok and sautéing minced garlic and ginger until fragrant.

  • Add the grated turmeric for that vibrant yellow hue and earthy aroma.

  • Mixed vegetables follow, cooking until tender-crisp.

  • The cooked rice joins the party, seasoned with soy sauce and sesame oil, ensuring every grain glistens with flavor.

  • Garnish the dish with chopped scallions and a sprinkle of salt and pepper.

2. Baked Fish:

  • For the baked fish, lay the Tilapia on a baking sheet, drizzle it with olive oil and lemon juice, and dust it with garlic powder, paprika, salt, and pepper.

  • A brief spell in the oven results in tender, flaky fish with a perfectly golden crust.

3. Fried Red Pepper and Onion:

  • The fried red peppers and onions are simple yet exquisite – sliced red bell peppers and onions sautéed in olive oil until they blister and caramelize (lightly), seasoned with a pinch of sea salt.

4. Spicy Tomato-Habanero Stew:

  • Simmer diced ripe tomatoes, chopped or crushed habanero peppers, onion, and minced garlic in olive oil until the mixture thickens.

  • A generous sprinkling of fresh cilantro adds a burst of freshness to the spicy stew.
